I have enjoyed cooking and making things since I was a child (strongly related to my mother and her mother who are/were great cooks). This interest eventually transferred to home brewing back in the late 80s before it was as popular as it is today. I still home brew different varieties of beer; lagers, pilsners, Scottish ales, stouts, etc but not as often as I used to (or would like to). From my love of brewing evolved an interest in fermentation, which eventually developed into a desire to begin making hot sauce.
Our family has had a small farm in Hillsborough, NC since I was seven years old, which is where I grow our peppers. The next stage of creation was to work on a hot sauce that would use peppers that I grew. I experimented with different peppers and eventually settled on an heirloom cayenne pepper that shared my last name- The Peter Pepper. I also crossbred the Peter Pepper with other varieties of peppers to create a new hybrid- Pretty Peter Peppers. The recipe using these peppers took several years of work to finalize, plus taking classes at NC State to be certified in making Acidified Foods. The final process was the scientific regulation part that included laboratory testing by NC State, FDA approval and final inspection by the NC Dept. of Agriculture. Finally, Peter’s Perfect Pepper Sauce (also known as 3P) was born. A lot of love has gone into this hot sauce, and I hope you thoroughly enjoy it.
